Trevi Hills sits atop ideal wine growing land, or terroir, where select varietals flourish and yield robust, flavorful grapes. From soil preparation to rootstock selection and trellising, our experts will help you lay the foundation for a fruitful vineyard that will produce for generations to come.

Step 1:

Growing & Nurturing

Nurturing your vines can be as hands-on or hands-off as you like. Sing to your grapes or sit back with a glass as our experienced vineyard staff handle weeding, spraying, and seasonal pruning. With help from our sommelier and vineyard master, your vineyard will flourish under personalized care and attention. And you can be as much a part of that process as you like.

Step 2:

Trevi Hills Grapes

Harvesting & Winemaking

Each year, late summer heralds the excitement of the harvest. When the grapes reach perfect ripeness, join our team for an immersive winemaking experience—pick, crush, and press your grapes right on the estate. By day’s end, you’ll have bins full of fresh juice, primed for fermentation and aging, each bottle crafted by your own hands.

Step 3:

Barreling & Bottling

Great wine takes time, and at Trevi Hills, each bottle is crafted with patience and artistry. After harvest, the freshly pressed juice is left to ferment in open-top containers, where grape skins—or "must"—are mixed in to add complex flavors, tannins, and rich color. This stage is where winemaking transforms into an art, as the winemaker carefully guides the process, adding select yeasts and enhancements to create a signature taste profile. Once the initial fermentation completes, the wine is filtered and transferred to closed containers, where it continues its journey, allowing the alcohol content to develop as flavors settle and mature. Six to eight months later, the wine is transferred to oak barrels for aging. Over the next year, each sip-to-be mellows, deepens, and achieves its peak flavor. When ready, your wine is carefully bottled, with every pour a testament to the craftsmanship and patience that went into creating your personal vintage.

Michael Larrañaga brings over 30 years of wine and hospitality expertise to Trevi Hills. A Certified Sommelier with the French Court of Sommeliers, Michael’s journey began in San Diego and has taken him to the vineyards of Italy and Northern California, where he honed his understanding of terroir and winemaking. Over the past fifteen years, Michael has crafted unique wine programs for celebrated restaurants in Michigan, Chicago, and New York, earning acclaim for his ability to blend tradition with innovation. At Trevi Hills, Michael offers residents expert guidance on all aspects of winemaking, from grape selection to bottling. Through exclusive tastings and education sessions, he invites homeowners to immerse themselves in the art and enjoyment of wine, enriching the vineyard experience and bringing the winery lifestyle to life.
